This is what I make for lunch when I want to eat at home, I want to eat healthy, and I am starving and don't have time to cook.
Here is my formula:
greens + meat + cheese + fruit + dried fruit + nuts
If you are vegetarian (or if you just don't have any meat in the house), this still works, just add a bit more cheese & nuts. Avocado would also be a welcome addition.
ingredients
- romaine lettuce (could use any greens)
- rotisserie chicken (buy from the grocery already cooked)
- goat cheese
- sliced apple (could use any fruit)
- dried cherries (any dried fruit)
- walnuts (any nuts)

Place the chopped walnuts in a pan. Roast. Toward the end add a little olive oil, salt, pepper, cayenne.
dressing
- vinegar (or combo of 2 vinegars)
- dijon mustard
- a little honey or sugar
- olive oil
Place first three ingredients in a bowl, then drizzle in olive oil while stirring. Add salt & pepper.
You could even skip roasting the nuts if you're in a huge rush.
There you have it-an easy healthy lunch at home. Close your computer, take your salad bowl outside, and enjoy a break and some fresh air for a few minutes.
