I am lucky enough to have a plum tree in my backyard. Isn't it nice when fruit or veggies grow in your home and you can skip the grocery store?
Well, I had plums galore and needed to find something to do with them. I googled a bit and found this very easy recipe for Plum Crisp. Throw some things in a pan and bake.
ingredients
12 plums, pitted and chopped
1 cup white sugar, divided
1 cup sifted all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1 beaten egg
1/2 cup melted butter
instructions
- Preheat oven to 350 degrees F. Grease an 8x8-inch baking dish.
- Spread the plums out into the prepared baking dish and sprinkle with 1/4 cup sugar. In a bowl, mix together 3/4 cup white sugar, flour, baking powder, and salt. Combine with beaten egg and spoon the mixture over the plums. Drizzle batter with melted butter.
- Bake in the preheated oven until the topping is brown, about 40 minutes.
It would be great with vanilla ice cream. I did not have any, and still ate 1/4 of the pan straight out of the oven.
I think you could substitute other fruit for the plums-whatever you have on hand. Use what is local and fresh and in season!
