What is lomo saltado? A traditional Peruvian dish, a stir fry that combines marinated strips of sirloin with onions, tomatoes, rice, and here's the best part: FRENCH FRIES.
Yes, this is a real Peruvian dish you can order at a nice restaurant, not a 2am Taco Bell stoner meal. The dish originated from the Chinese cuisine of Peru. Chinese-Peruvian fusion....trendsetters! The rice mixed with the potatoes of Peru (french fries) is a delicious combo.
How did this come to be? Large numbers of Chinese immigrant workers came to Peru between 1849-1874, when having a Chinese cook was considered a luxury. After these Chinese Peruvians completed their indenture contracts, many opened restaurants known as Chifa.
Is it healthy? Well...it is gluten free. Not many veggies, so if you ordered a salad to start, I think this would be a great meal.
Saltado means jumped off, or stir fry. Lomo means loin.
I enjoyed this dish at Pisco Sour in Lone Tree, Colorado. Their description: Tender Beef, Onion, Tomato, Cilantro Sauteed in A Pisco Ginger Sauce. Home Fries. Next time you are at a Peruvian restaurant, try Lomo Saltado!
