A healthy, flavorful, and easy dinner: seared steak + salsa verde. This is part of a Blue Apron recipe. I didn't love the veggies, but the steak + salsa verde was great & very easy!
ingredients
- 2 sirloin steaks
- 1 clove garlic
- 1 lemon (they used pink lemon)
- 1 bunch parsley
- 1 Tbsp. capers
- salt, pepper, olive oil
instructions
Pat steaks dry with paper towels; season with salt & pepper on both sides. In a large pan, heat 2 tsp. olive oil on medium-high. Add the season steaks and cook 3-4 min per side for medium-rare. Transfer to a cutting board, loosely cover with aluminum foil, and let rest for at least 5 minutes.
In a medium bowl, combine parsley, capers, juice of 1/2 lemon, and garlic. Slowly whisk 2 Tbsp. olive oil until combined. Season with salt & pepper.
Thinly slice the rested steaks against the grain and top with salsa verde.
