Amira is my wonderful friend who always makes wonderful salad. I asked her to put together her list of salad dressings for us (which is of course only in her head). Amira, I know this was hard to write out, but your girls will thank you one day, and the rest of us will too!
finely chopped shallots
~1/2 c Cider vinegar
~ tablespoon of Dijon mustard
Olive oil (~ 1-1.5 times as much vinegar)
couple dashes of aged balsamic vinegar
salt & pepper to taste (I like it salty); you can also make it a little under-salted and add finishing salt when serving
You can adjust by using the same basic model, but different vinegars, champagne vinegar, white balsamic, red wine. Some combos I like:
- all champagne vinegar and a little lighter on the mustard (this is a delicate dressing so best on butter lettuce)
- red wine vinegar with a couple dashes aged balsamic (has nice tartness)
- all white balsamic (this is on the sweeter side, but still light)
- even mix of red wine vinegar and balsamic (this is a little heavier and sweet from the balsamic)
